Meal Monday: Chicken Fajitas

It's Monday again and that means the weekend is over and back to reality.  I know I have a hard time finding motivation on Mondays, especially when it comes to what I'm having for dinner.  I thought I would post a new recipe each Monday in the hopes that it will help some of you answer the dinner question!

This week is a super easy chicken fajita recipe.  And the very first recipe that made me start to like Mexican food!  I know, it's crazy.  Read more about that here.

Shopping List
1 lb boneless, skinless chicken breast
2 tbsp olive oil
2 tsp chili powder
2 tsp cumin
1/2 tsp garlic powder
1/2 tsp crushed red pepper (for a little kick!)
2 bell peppers
1 onion
10 tortillas - either soft or hard
 Optional toppings: cheddar cheese, guacamole, salsa, refried beans

 Directions
1) Remove the fat from your chicken breasts and cut them into strips.

2) Cut your 2 bell peppers (can be any color, I used green and red) and your onion into strips.


3) Preheat the oven to 400 degrees.

4) In a small bowl, combine the olive oil, chili powder, cumin, garlic salt, and crushed red pepper.

5) Place the chicken strips, bell peppers, and onion in a greased 9 x 13 baking pan.



6) Drizzle the spice mixture over everything and stir to coat.

7) Place the dish in your preheated oven and bake uncovered for 25 minutes (or until chicken is cooked through).

8) Serve on tortillas with desired toppings. 


Too easy!  I like to use flour tortillas with my fajitas, although hard shells are also delicious.  I topped off my fajita with cheddar cheese, guacamole, and refried beans.  I served this dinner with Mexican rice and chips and salsa.  A perfectly simple Monday night recipe!
