Meal Monday: Creamy Rigatoni Pasta

Thank God for Google.  What did we do before it?  I remember using Ask Jeeves which is now just Ask.com... I wonder what happened to Jeeves.  Anyways, this pasta all came about when I had a block of leftover cream cheese that I didn't know what to do with.  I googled "recipes with cream cheese" and came upon a recipe called Spaghetti a la Philly.  If you know me, you know that I don't really like spaghetti noodles.  When I eat spaghetti, I always use angel hair noodles.  Don't ask me why.  I changed up the recipe I found and a delicious, creamy rigatoni pasta was created!  It's super simple and requires only a few ingredients that you probably have in your house (no grocery store, bonus) so make this for dinner tonight!

Shopping List
1 box rigatoni noodles
1 jar (24 oz) meat sauce - I used Prego's Italian, Sausage and Garlic and it was delish
4 oz plain cream cheese
Parmesan cheese
Basil (for garnish)


Directions
1) Cook rigatoni noodles al dente as directed on the package.

2) Meanwhile, heat sauce and cream cheese in a skillet over low heat until blended together.  This should take 3-5 minutes.  Stir frequently to mix the cream cheese.



3) Drain noodles.

4) Add to the sauce pan.  Mix lightly over low heat to allow noodles to absorb the sauce.


5) Serve onto individual plates and top with Parmesan cheese and basil.


I served this dinner with pretzel rolls and applesauce.  If you aren't lazy like I am, this recipe would be delicious with some ground beef or turkey instead of just meat sauce.  You could also add in onion or mushrooms, whatever you like!  Enjoy!
