Pumpkin Mini Muffins

I love anything pumpkin in the fall and I love mini muffins all year round, so I figured why not combine the two?  I made these for the first time after church a couple weeks ago and we pigged out on them!  The recipe made 60 mini muffins and I'm embarrassed to say that in a week, Nick and I probably ate the majority of them.  I was planning on bringing them to our friends at volleyball but I didn't want to share forget them so we just had to eat them all.  And besides, they are mini so that doesn't make them all that bad.

Shopping List
1 box Spice cake mix
2 small instant vanilla pudding mixes
1/2 cup vegetable oil
1 cup water
4 eggs
1 cup pumpkin
1 tbsp cinnamon


Directions
1) Preheat oven to 350 degrees.

2) Grease a 24 count mini muffin pan.. and grease it well! Nothing worse than your beautiful muffins being stuck in the pan!

3) In a mixing bowl, combine the spice cake mix, 2 instant vanilla pudding mixes, vegetable oil, water, eggs, pumpkin, and cinnamon.  Mix well.

I'm obsessed with my Kitchen Aid mixer.


4) Pour into muffin pan, filling each muffin about 3/4 of the way full.

5) Bake in preheated oven for 12 minutes.

6) Let cool in pan for 6 minutes.  I found the easiest way to get the muffins out of the pan was just to literally flip it over and let them fall onto a serving tray but do whatever works for you!


So sorry I don't have a better picture of the muffins!  But really, who has time to take pictures when there are fresh pumpkin mini muffins to be eaten?!  Enjoy!
