Meal Monday: Caramel Apple Coffee Cake

 
I know coffee cake isn't technically a "meal", but just let me explain!  This week and next week, I am doing a Thanksgiving breakfast edition of Meal Monday.  Thanksgiving Day is all about eating, so why would you start the day off with a lame breakfast of cereal or a bagel?  You might as well go all out and have a delicious breakfast as well!  My family doesn't typically eat our big meal until around 2 pm in the afternoon, so I need some fuel in the morning so I'm not snacking on my Thanksgiving dishes while preparing them.  Caramel apple coffee cake + a big cup of coffee is the perfect way to start your Thanksgiving celebrations!

Shopping List
For the Cake: 
   -1 box of Pillsbury Caramel Apple Cake Mix
   -4 eggs
   -1/2 cup vegetable oil
   -1/3 cup sour cream (I used light)
   -3/4 cup cinnamon applesauce
   -1 cup light brown sugar
   -1 tbsp ground cinnamon


For the Frosting:
   -1/2 cup buttercream frosting
   -2 tbsp caramel dip
   -2 tbsp milk
   -1/2 teaspoon vanilla extract


Directions
1) Preheat your oven to 325 degrees and grease a 9 x 13 baking dish (I used Pam and parchment paper - read about why to do this and the best way to do it here.)

2) In a mixing bowl, combine the cake mix, eggs, oil, sour cream and cinnamon applesauce.  Mix until well blended.

3) Pour cake mixture into your greased baking dish.


4) In a small bowl, mix together brown sugar and cinnamon.


5) Sprinkle evenly over the cake mixture.  Using a fork to gently swirl the cake mixture with the brown sugar topping.


6) Place in preheated oven and bake for 40 minutes or until toothpick inserted into the center of the cake is clean.

7) While cake is baking, prepare the frosting.  In a small bowl, combine the frosting, caramel dip, milk and vanilla extract.  Whisk until the frosting is free of lumps and is a glaze consistency. 


8) Once the cake is fully baked, use a spoon to drizzle the frosting over the top.  Allow 20 minutes for it to cool before serving.

This dish is best enjoyed the second day when the flavors have had time to come together.  Bake this the day before Thanksgiving to make your morning even smoother.  Enjoy!

  1. Yum, yum, YUM!! I don't think I'll be able to wait for Thanksgiving to make this one. :) We eat about the same time on Thanksgiving, so this would make a perfect breakfast!

    1. Starbucks has the BEST coffee cake! I'm obsessed with their very berry coffee cake and make a homemade version of that, too. I have to get that up here because it is amazing!
