Thanksgiving Dinner on a Week Night

Nick and I managed to get all of our Christmas shopping finished this weekend and that is a big check off our to-do list!  It's going to be a busy week of wrapping gifts, hosting a Christmas party, work, hair cuts, laundry and packing!  And you know what busy weeks call for?  The CROCK POT.  I don't know what I would do without my beloved crock pot.  I work a couple night shifts a week so it's the perfect way to still be able to have dinner ready for Nick even though I'm not there!

When your husband makes your plate of food, it's not always picture worthy

We tried this chicken & stuffing crockpot recipe I found on Pinterest and while I will admit I didn't have high hopes for it, it turned out wonderful!  Served with a side of sweet potatoes and it was like having Thanksgiving dinner on a week night!

Shopping List
4 thawed chicken breasts
6 oz Stove Top Stuffing Mix (I already had the turkey mix on hand so that is what I used and it worked great!  You could also get the chicken mix)
1 can Cream of Chicken soup
1/2 cup sour cream
1/4 cup water

Directions
1) Not required but use a crock pot liner!!!  Makes life so much simpler.



2) Place your chicken breasts in the crock pot.

Raw chicken just grosses me out

3) Layer stuffing mix on top of the chicken.


4) In a mixing bowl, combine soup, sour cream and water.  Mix until completely blended.


5) Layer over top of the stuffing mixture.


6) Place your lid on and cook on low for 4 hours.

How easy is that?  I love the crock pot.  Make this dinner this week and focus on the more important things - like spending time with your family and friends! Enjoy!

  2. Crock pot meals are my favorite-- that and anything I can make with a shredded rotisserie chicken! If I try and cook or bake meat on the stove or in the oven I'm constantly paranoid it isn't done all the way and everything ends up so overcooked! I love being able to just add a few ingredients and come home hours later to a really good meal!

    I made these (http://www.skinnytaste.com/2012/12/slow-cooker-chicken-black-bean-tacos.html) last week and they turned out really well! We of course added cheese so I'm not sure how "skinny" they ended up being-- but they were super easy!

  11. Yay for Maegan!! She's so sweet! Raw chicken grosses me out, too!! And yet that's the meat I usually use when cooking a dish. This meal sounds yummy!
