Meal Monday: Caprese Pasta


One of my favorite warm weather dishes is caprese salad.  It was 60 degrees here in Chicago last Wednesday and while that was warm, it wasn't quite warm enough to go and break out my summer recipes.  I thought about how I could transfer my caprese salad into a winter recipe and duh, caprese pasta!  This was so easy and soooo good!  The fresh tomatoes really make the dish. 

Shopping List
1 lb pasta - I used rigatoni but you can use whatever!
1 tbsp olive oil
1 jar of spaghetti sauce
1/2 cup Parmesan cheese
1/2 cup heavy cream
1 cup mozzarella - I used shredded
1 cup cherry tomatoes
3-4 basil leaves (not pictured)


Directions
1) Preheat oven to 350 degrees and begin boiling water for your noodles.

2) Cook pasta according to package.

3) While pasta is cooking, cut your cherry tomatoes into halves.

 Yum!

4) In a large saucepan, heat your sauce over medium heat.


5) Once the sauce is heated, stir in heavy cream and parmesan cheese.  Simmer for 3 minutes.


6) When noodles are finished cooking, drain and transfer into an 8 x 8 baking dish.  Drizzle with olive oil to coat noodles so they don't become sticky.

7)  Once sauce is finished, pour over noodles.  Add in your cherry tomatoes and 3/4 cup of mozzarella cheese.  Mix well.


8) Top with remaining 1/4 cup mozzarella cheese.


9) Bake in preheated oven for 20-23 minutes or until browned.


I totally forgot to get fresh basil while I was at the store and I was too lazy busy to go back, so I had to substitute bottled basil.  It was still delicious but would be that much better with fresh!  I served with garlic bread and green beans.  Enjoy!
