Meal Monday: Ravioli Casserole


Is that a terrible picture or what?  Haha

Anyway, every family has their holiday meal traditions.  In my family, we go out for brunch on Easter, have turkey and 18 different pies on Thanksgiving, ham for Christmas and fondue for New Years.  This was the first year I spent Christmas away from my family and while it was hard, it was fun getting to spend it with Nick's family and follow their Christmas "traditions".  Every year for Christmas, they have a homemade spaghetti dinner!  His grandma used to make her own noodles and sauce and they have meatballs with raisins and buttered bread.  Anyone that knows me knows that I love me some pasta so I was excited for this traditional dinner!  His mom doesn't make homemade noodles anymore but does make some delicious homemade sauce.

And of course, no matter what traditional dinner you have during the holidays, there are always leftovers.  We came back to Chicago with a huge bag of sauce and tons of meatballs.  By Sunday night, we were spaghetti-d out but I didn't want the sauce to go to waste so I consulted my trusty Gooseberry Patch cookbooks and found this recipe for ravioli casserole!  It is sort of like lasagna but with cheese ravioli and it was so good and hearty for a freezing cold Chicago night.  You'll enjoy this easy, cheesy recipe!

Shopping List
24 ounces of jarred spaghetti sauce (I used homemade but included a jar for picture purposes!)
25 ounce frozen cheese ravioli (you can use any stuffed ravioli.. meat or spinach would be great, too)
2 cups cottage cheese
4 cups shredded mozzarella cheese
1/4 cup Parmesan cheese


Directions
1) Cook frozen ravioli according to package.

2) Drain carefully - do NOT rinse the noodles!

3) Preheat the oven to 350 degrees.

4) Spread 1/2 cup of spaghetti sauce in a lightly greased 9 x 13 baking dish.


5) Spread half of the ravioli in the dish.

6) Pour 1 1/4 cups sauce and spread over the ravioli.


7) Top with 1 cup cottage cheese.


8) Top with 2 cups mozzarella cheese.


9) Repeat layers again - second half of ravioli's, 1 1/4 cup sauce, 1 cup cottage cheese and 2 cups mozzarella cheese.


10) Top with Parmesan cheese.


11) Bake uncovered in preheated oven for 40 minutes.


12) Let stand 10 minutes before serving.

This was such an easy recipe but I still somehow managed to make a mess!  That's just how Sunday's go I guess.  I served the casserole with our homemade meatballs and garlic bread.  Enjoy!

  7. Oh my gosh, this looks so good!
    It's so interesting that the recipe calls for cottage cheese instead of ricotta cheese...how weird! I've never used cottage cheese in a dish like this, but i'm sure it's still delicious!
