Meal Monday: BBQ Chicken Pizza


We love pizza at our house and this BBQ chicken pizza is seriously a winner.  We actually made it twice in one week that is how good it was!  If you've ever been to California Pizza Kitchen, you know how amazing their famous BBQ chicken pizza is - and this is almost an exact replica, taste wise.  We are lazy and used pre-made, store bought pizza dough but I bet it would be even more delicious with homemade!

Shopping List
Pizza dough - I used a Pillsbury Classic Pizza Crust
20 oz BBQ sauce
16 oz mozzarella cheese
1/3 lb shredded chicken - I used a rotisserie chicken
1/2 red onion, chopped
Cilantro, chopped, to taste (use FRESH!  It tastes so much better)

Directions
1) In a small mixing bowl, coat chicken with BBQ sauce, to taste.  I like to do this ahead of time and store in refridgerator to let the chicken soak up the flavor until I'm ready to cook.

2) Preheat oven to temperature designated by pizza dough.

3) Spread a tablespoon of olive oil over baking sheet.

4) Roll out pizza dough on baking sheet and slather BBQ sauce all over the dough.

 
5) Top with half of mozzarella cheese.

6) Top with shredded chicken, red onion and cilantro.


7) Top with remaining cheese.


8) Bake in preheated oven for amount of time designated by pizza dough, until crust is browning and toppings are bubbly.

9) Let sit for 5 minutes before cutting.


We served this with roasted butternut squash - the perfect winter side!  Enjoy!

  10. Even though I LOVE Trader Joe's pizza crust, it's way more convenient to buy this kind at the grocery store. TJ's is like 20 minutes for me...that ain't convenient!

  15. I think I would get wife of the year award if I made this for Mr. Redneck. He has ordered it at a restaurant before. But, I just simply don't cook. I always like to look at your picture, though. :)

  16. BBQ pizza is a favorite at our house too!! I made some last week and wished that I'd used a store bought crust. My homemade crust turned out to be too thick.
