Meal Monday: Lemon Chicken Soup


After a weekend of skiing, I woke up Sunday morning craving soup.  I'm not a huge soup person but I feel like I haven't been able to get warm at all this winter so I'm becoming more of a fan!  I decided I wanted lemon chicken soup for dinner - don't know where that came from since I've never had it before.  I found a recipe online and after some tweaking, a quick and easy lemon chicken soup was born!

Shopping List
1 pound of chicken - cooked and shredded (I used a rotisserie chicken)
2 lemons - juiced
1 cup uncooked white rice
36 ounces chicken broth (I used 2.5 14 oz cans)
2 large carrots - chopped
2 large celery stalks - chopped
1 onion - chopped
Black pepper to taste

Directions
1) Chop up your carrots, celery stalks and onion.

2) In a large pot over medium heat, combine chicken broth, cooked chicken, lemon juice, carrots, celery, onion and pepper.  Bring to a boil.

3) Once boiling, reduce heat and stir in uncooked white rice.

4) Simmer until rice and veggies are tender, about 20 minutes.

And that is it!  You are only going to get two dishes dirty - your cutting board and your large pot.  Perfect for a lazy Sunday night.  I served with warm bread and it was delicious!  Enjoy!

  10. This looks so easy! I love it! I'm not a soup person either-- I always find them to be WAY too salty but I love the idea of making one more from scratch so you can control the sodium much better!
