Meal Monday: Prosciutto Pasta



I'm aware that my Meal Monday's are turning into pasta, pasta, pasta.  In all fairness, I did have this great plan to share an amazing fish and chips recipe with you today - until I made the recipe myself and it wasn't exactly amazing.  It was actually gross.  I threw the leftovers away and we rarely do that around here.  So today you get another pasta recipe but this isn't just your regular old spaghetti pasta - this is prosciutto + asparagus + mushroom creamy goodness. 

We don't repeat a lot of recipes at our house but this is one that makes probably a monthly occurrence.  Nick loves it and I know if I ever ask him what he wants for dinner, this will be one of his first suggestions.  It all started as just another pin on Pinterest that was probably never going to get made until my friend texted me, thanking me for pinning this recipe because she made it for dinner and it was so good.  How can you not try something after that?  I made the recipe that week and she was right.  It's now a pasta staple around here!  Thank you ValSoCal

Shopping List
8 oz of angel hair pasta
2 tablespoons of olive oil
2 garlic cloves
4 oz of prosciutto, tore into strips
1 lb asparagus, trimmed and cut into 1 inch pieces
1 1/4 cups heavy cream
1/3 cup grated parmesan cheese
1/2 tsp red pepper flakes
Salt and pepper

Directions
1) Cook pasta according to directions on box.  Add to serving bowl when finished.

2) Meanwhile, heat olive oil in large sauce pan over medium-high heat.

3) Once heated, cook onion, garlic and mushroom until semi-done, about 3-5 minutes.

4) Add prosciutto and asparagus to sauce pan and cook until asparagus is bright green, about 3 minutes.


5) Add cream, parmesan cheese, red pepper flakes and salt and pepper and stir to mix and coat everything. 


6) Reduce heat and simmer until sauce thickens, about 4 minutes.

7) Pour sauce with vegetables over pasta in serving bowl and toss to coat.


8) Top with additional parmesan cheese and baked prosciutto (optional) and serve.

  1. OMG this looks phenomenal!! I love prosciutto so much! I can't buy it anymore because it's so damned expensive and I'll eat the whole thing in one sitting! But maybe I'll buy some to try this!

  3. I am loving the pasta recipes! They're so easy and you always have such good ways to mix up the usual pasta + sauce! My husband loooves prosciutto so he would probably love this too!

  8. i crave pasta at least twice a week. pasta pizza and mexican are must-haves twice a week. leaving the other day for something different, lol.
