Meal Monday: BBQ Chicken Taquitos


We love us some taquitos but for some reason, the homemade version that is floating all around Pinterest kind of intimidated me.  I found a recipe that intrigued me and decided to give it a try... and I'm so thankful I did because it was so easy!  I decided to do a BBQ chicken filling because we've been on a BBQ chicken kick lately over here and they were amazing.  Try these today and see for yourself how simple - and delicious - they really are!

Shopping List
8-10 flour tortillas (depending on how big you want your taquito's to be.. I wanted them a little thicker so I used 8 tortillas)
1 pound chicken, cooked and shredded (I used a rotisserie chicken)
1 18 oz bottle of BBQ sauce
1 red onion, chopped
1 1/2 cups mozzarella cheese, shredded
2 tbsp cilantro, finely chopped
Nonstick cooking spray

Directions
1) Preheat your oven to 400 degrees and line a large baking sheet with tin foil (for easy clean up!).

2) In a large saucepan warm a tablespoon of olive oil over medium heat.

3) Saute onions until soft, about 3-5 minutes.

4) Add in your shredded chicken and BBQ sauce.  Stir to combine and heat through until bubbling - about 3 minutes.


5)  Remove from heat and stir in mozzarella cheese and cilantro.  Mix well.


6) Spread chicken mixture evenly over your 8-10 tortillas.


7) Roll up and place SEAM SIDE DOWN on baking sheet.
 

8) Spray the tops of the taquito's with non stick cooking spray.

9) Bake for 15 minutes or until golden brown.

I love this method because you can use all kinds of different "fillings".  Imagine taquito's with the mixture from the oven baked chicken tacos or a breakfast taquito.  The options are endless!  These have definitely become a staple in our house and I hope you love them as much as we do!

  13. May I suggest adding a line to your awesome recipes that says how long it takes to prepare?... I say that only because making a recipe of yours is on my bucket list but I need to go with the least prep time... :)

    1. Haha I love you! I'll start doing that just for you! This recipe took about 25 minutes to prepare - and that includes oven preheating and chopping the veggies (well, the onion and cilantro) time.
