Meal Monday: Pesto Tortellini


A four ingredient, 15 minute dinner.  Have I caught your attention yet?  Good, because you're going to want to try this!  It only has a few ingredients, takes literally no time to cook and has a lot of flavor - that is my kind of week night meal.  Nick was pretty skeptical the first time I made this because he's not a big pesto fan (why I used artichoke pesto instead of regular), but even he liked this dish!  I'll probably stick to making it when he's not home though, just so I don't have to share...

Shopping List
1 Package of Cheese Filled Tortellini
8 oz pesto (we used artichoke pesto and I would highly recommend it!)
1/2 red onion, chopped
8 oz jar of sun dried tomatoes, drained and cut up
Parmesan cheese if desired



Directions
1) Boil water in large pot.

2) Chop up red onion and sun dried tomatoes.


3) In a big skillet over medium heat, saute red onion in a tablespoon of olive oil for about 5 minutes or until soft. 



4) Add tortellini to boiling water - cook until floating.


5) Add sun dried tomato and pesto to red onions and heat through, about 2 minutes.


6) Drain tortellini and add to skillet, stirring well to coat each noodle then serve.


That's it!  This little meal takes a whopping 15 minutes max.  Next time I'm going to try adding shrimp or chicken to it, yummm.  Happy Monday!

  5. That looks so good....and I need easy meals throughout the week because I cannot process anything after working all day :-) Artichoke pesto? Definitely need to find that the next time I go shopping.

  7. Artichoke pesto sounds fantastic. I always use spinach so this would be a great change to try next time.
