{Guest Post} MM: Creamy Asparagus & White Bean Soup

Happy Monday everyone!  I hope you've all had a wonderful weekend.  I certainly have.. I'm in southern Florida for the next week with my family and husband.  As you are reading this, I'm either working on my tan, sipping a cocktail, reading, playing beach volleyball, napping, shopping or eating - not to rub it in or anything :) It is going to be a VERY good week and I will miss you all but I've got quite a few guest posts lined up that I'm really excited about!  First up is my girl Lindsay from Pink and Fabulous sharing one of her favorite lunch recipes for Meal Monday.  Have a great week - and don't forget to follow along on Instagram (ka5ohare) for some vacation pictures!

Hello lovely Katie Elizabeth readers! I am so excited Katie asked me to post today!  I love her blog and catching up on her life!  I am Lindsay and I blog over at Pink and Fabulous.  I love to chat about fashion, shopping, food, and kiddos!  Today, in keeping with Katie's Meatless Mondays and dairy-free habits I am sharing one of my favorite soups.  I make this almost every week to have as lunch.  One batch makes about four servings.


Ingredients
- One bag frozen asparagus, cooked
- One white onion, diced
- Four cloves of garlic, minced
- One can white beans (I prefer Great Northern)
- One container chicken broth or vegetable broth
- Two tablespoons olive oil
- Salt to taste
- Crushed red pepper to taste

Directions
- Heat olive oil in a large soup pan
- Add onion and garlic and saute 3-5 minutes until onions are translucent and garlic is fragrant
- Add in asparagus and cook for 3 more minutes
- Add in broth and beans and bring to a light boil
- Simmer for 20-25 minutes.
- Blend with an immersion or tabletop blender (I use my VitaMix) until smooth
- Serve with salt and crushed red pepper to taste.


The best part?  Each serving is only 200 calories!  I like to eat mine with my favorite Udi's Gluten Free bread toasted with some hummus.  Eat and enjoy!
