Meal Monday: Cinco de Mayo Edition


Happy Cinco de Mayo!  We celebrated on Saturday and it was the best day.  It was actually a housewarming/birthday/Kentucky Derby/Cinco de Mayo AND engagement celebration!  One of my best friends, Erica, got engaged last week and we are all so excited for her!  Since there was lots to celebrate on Saturday, we went all out.  We had a taco bar, margarita's, a refridgerator stocked full of beer and plenty of Fireball + Rum Chata shots.  Let's just say Sunday was a day of recovery.  And I had to go to work.  It was rough!

For Meal Monday, I thought I'd share a couple of ideas for your dinner - aka Mexican Fiesta - tonight!

+ Cilantro Lime Tacos
Delicious and made in the crockpot.. doesn't get any better than that. 

+ BBQ Chicken Taquitos
We love taquitos but for some reason, making them at home intimidated me forever.  I have no idea why - it couldn't be easier!  You can have this entire meal ready in 30 minutes. 


+ Baked Chicken Tacos
This is my husband's most requested meal.  We'd probably have it three times a week if it were up to him!  This would also be really good with ground beef if you prefer that over chicken.


+ Chicken Fajitas
Who doesn't love a faijta?  The chicken recipe is simple and then add on whatever toppings you desire!


And don't forget to pair it with this... Ole!  ;)
