Apple Cider Glazed Sweet Potatoes


I can't believe I forgot to share with you my VERY favorite fall side dish on last weeks Taste of Tuesday!   We still haven't made it to the apple orchard/cider mill yet but it's on the agenda for this coming weekend... and you can bet I'll be making a few batches of this delicious and easy side dish.  Apple cider + sweet potatoes = match made in heaven.  I dare you to try it!

Shopping List
1 lb cubed sweet potatoes (I buy them in these precubed bags below, all ready to go.  Sooo much easier!)
1/2 cup apple cider
1 tbsp olive oil
Salt & Pepper to taste


Directions
1) Preheat oven to 400 degrees.

2) In a mixing bowl, combine your sweet potatoes, olive oil and S&P.  Stir well until each potatoes is coated.

3) Transfer potatoes to a baking sheet.

4) Bake for 25 minutes, turning the potatoes at the halfway mark.

5) Meanwhile, bring your apple cider to a boil in a saucepan over high heat.  Cook until the apple cider is reduced to about 3 tablespoons.  *Keep an eye on this, it will burn if you're not stirring often!  Been there, done that ;)

6) Remove the sweet potatoes from the oven when finished cooking and pour the apple cider reduction over them.  Pop back in the oven for an additional 5 minutes.

And voila!  Apple cider glazed sweet potatoes :)  Enjoy!

  4. Ha, I read the "apple cider" part wrong and thought it said apple cider vinegar (which made me think this was a whole 30 compliant recipe) hence the deleted comment! Sorry! This sounds delicious, and I'll definitely have to make it soon!

  15. Ohhhh, I like this! I don't care for sweet side dishes (I have ZERO sweet tooth), but could turn it into a dessert with a touch of cinnamon sugar, or make it more savory with apple cider vinegar and chicken stock. Thanks for the great ideas!

  18. Yum! I always think I like sweet potatoes, but then I never actually do-- unless they're something sweet like this! Buying them already cut is such a good idea! I wish I would have done that for a soup I made a few weeks ago because cutting the sweet potato up was a nightmare!
