Taste of Tuesday: Side Dishes

Every Monday, I sit down and meal plan -- which is the biggest life/money/sanity saver ever and if you aren't doing it, you should start! -- for the week. Mostly thanks to Pinterest and the hundreds of recipes I pin (daily), it's easy for me to decide what I want to make each night.  The part I struggle with the most?  Side dishes.

It's difficult for me to come up with a variety of different sides that are decently healthy, not repetitive or boring but still quick, easy and don't take away from the main course.  Since moving, I've been trying to mix it up and I have discovered three favorite new dishes to share!

Green Bean Bacon Bundles
Good ol' Gooseberry Patch never fails to disappoint me.  I knew these would be a hit with my husband (bacon's #1 fan) but I was surprised at how much I enjoyed them, too.  They seem like a fancy dish but are really so easy to make!

Roasted Honey & Cinnamon Peaches
Oh my word.  DE-lish is all I have to say.  After buying a ridiculous amount of peaches at the farmers market one week, I was looking for a way to use them up and stumbled upon this recipe.  You guys, you must try these!!!  You'll fall in love, too.  They would even work as a "healthy" dessert option.

Garlic Parmesan Fries
Sometimes a girl just wants some fries, am I right?   I like these because they're not deep fried, they're just baked in the oven (they still get crispy though, don't worry).  Super easy and they have SO much flavor.  I obviously overcoat them with parmesan because I looove me some parm.

And now I'm hungry!  What are your go-to side dishes?

  5. Oooooh, the fries and peaches look so good! My problem with side dishes is choosing ones that I can easily have ready at the same time as the entree. A favorite of mine is canned green beans. They can just sit in a small pot with seasonings, maybe some bacon bits, on low heat for a while (I leave the liquid from the can in the pot).

  9. I love green beans! Those look delicious! The only time we have sides (which is kind of bad) is when my husband grills and we'll had a potato and vegetable of some sort. During the week I think we end up being lazy, so I'm going to have to give some of these recipes a try.

  12. The bacon and green beans would be a big hit with my hubs too! I'm a big fan of trying new veggie combos and either roasting them in olive oil or sauteing them in butter, then adding an herb. For example, red potatoes + asparagus + red onion + rosemary. It's fun to see what the different combos taste like, and how the herb can totally change the whole dish.

  13. Those potatoes look so good! Cinnamon & honey roasted sweet potatoes, salad, guacamole and green beans are probably our 4 most consumed sides :)

  24. Yum roasted peaches sound heavenly! I am always on the lookout for good side dishes, they are definitely the hardest part of the meal! I make way too many salads and roast veggies and then end up so bored and snacky after dinner.

  25. I love how simple and fresh everything looks! Our go-tos are definitely roasted veggies (Brussels sprouts, broccoli) or Velveeta Shells and Cheese (trey's pick but I don't complain ha).

  26. so trying those fries. I'm really bad with side dishes, normally i try and make like a one dish meal, like pasta or stir fry or whatever, but if we're having something that requires a side i normally do a salad or steamed veggies, which gets old fast!

  27. Oh my goodness I need those garlic fries right about now! I love any roasted veggies for a side and am all about some quinoa!
