Pumpkin Sausage Pasta

I meant to get this post up for all of the Tuesday food link ups but turns out that life with a puppy = life revolving around a puppy!  We are crate training Brady and so far, things have been going pretty good.  However, I haven't gotten anything done this week.  Besides taking 150 pictures of him and making twenty potty trips outside each day. Good thing he's sooo cute!

Anyway, here's a recipe you need to try.  I wasn't so sure about it the first time I made it but now I'm a huge fan and it's one of my favorite fall recipes.  Pumpkin really DOES taste good in pasta.


Shopping List
1 pound pasta
1 pound sausage (pork,chicken, turkey.. whatever you prefer)
1 spoonful of garlic or 3 garlic cloves, chopped
1 onion, chopped
1 cup chicken broth
1 cup of pumpkin (not pumpkin pie filling)
Parmesan Cheese to garnish

Directions
1)  Cook noodles al dente as directed on the package.

2)  Meanwhile, in a large skillet, heat a tablespoon of olive oil over medium-high heat.   Brown and crumble your sausage- about 5 minutes.

3) After your sausage has browned, add in chopped onion and garlic and saute for an additional 5 minutes.

4) Pour in chicken broth and lower heat to low.  Simmer for about 3 minutes.

5) Stir in pumpkin and heat on low for 3 minutes.

6) Add your drained pasta to the pan and mix lightly over low heat to allow noodles to absorb the sauce.

So easy and so good!  If you want another amazing pumpkin recipe, try these pumpkin brownies.  I think I might make them this weekend -- deeeelish.

  3. Yum! I feel like pumpkin would taste delicious in pasta because its similar to butternut squash. I have a butternut squash pasta recipe that is super similar, making the sauce out of the squash. I have pumpkin at home so I definitely need to try this version!

  16. Hmm, so it's not as weird as I thought it would be haha. Just looks kind of like a carbonara sauce (or I'll tell myself that) so maybe I need to give it a try. With lots of Parmesan! Kiss that little fur nugget for me!

  21. This sounds amazing! We had pumpkin chipotle spaghetti the other night and it was amazing. The pumpkin was a great compliment to the kick from the chipotle. We brought home a new dog yesterday and last night was... rough.. but worth it. Just found your blog, going to go stalk it now!
