A Week Of Meals

Last year, I wrote a pretty detailed post (see here) on why I love meal planning and I still 100% stand behind that.  It is the biggest time and money saver and it's so nice not stressing at 4pm everyday about what we're going to be eating that night.  We've tried some really delicious meals lately (thank you Pinterest) so I thought I'd share what we ate last week in hopes that it will help some of you start meal planning too or if you're just stuck in that winter dinner rut!

MONDAY | Avocado Salmon via The Cookie Rookie
We didn't grill these since it's February and we live in Michigan but it was just as delicious cooked in the oven!  It's the seasoning and avocado topping that really make the recipe.  I served it with butternut squash and rice pilaf.



TUESDAY | Gnocchi with Meat Sauce via Taste and Tell Blog
I've always been on the fence about gnocchi but this recipe changed that.  SO GOOD!  The meat sauce was slightly spicy just an FYI but I think that's also why Nick loved it so much.  Served with a french baguette and green beans.



WEDNESDAY | Apple Juice Chicken via Oatmeal with a Fork
Thanks to Ally for this recipe!  It sounds crazy that it's only three ingredients but I promise it's amazing.  I served it with caprese salad and the leftover french baguette (to soak up the delicious juices).


THURSDAY | Breakfast Burritos via The Pioneer Woman
Another incredible recipe from The Pioneer Woman, she does no wrong!  We love these and I always make them on Thursdays because then we have leftovers going into the weekend.  I just served it with a fruit salad for a really easy dinner.


And on Fridays, we go out to eat!  My favorite night ;) Let me know if you have any questions about meal planning - I'd love to help if I can.

  1. I'm a big believer in meal planning too! It's amazing how quickly going out to eat adds up before you realize! That avacado salmon looks amazing, I'll definitely be trying that out.

  2. I always try to meal plan but then life gets in the way some weeks and I don't make anything I planned on haha! Although I rarely go out to eat so I guess that's a good thing. All of these sound so good! That apple juice chicken looks amazing!

  3. Everything looks so good! I like to meal plan too, I just hate when I try to make something and it doesn't turn out good. I wasted money on the items and now have to go out and grab something already-made to eat. Sigh! Please world, all I want are good cooking skills!! Haha

  5. I'm a total believer in meal planning as well, it's such a huge saver of both money and time like you said! Friday is usually a "free for all" for us too, whether we go out for happy hour or we stay in and have happy hour at home on the patio with snacks and drinks.

    And that avocado salmon looks DELISH!!!!!

  7. I totally agree about meal planning. Whenever I don't do it, I either get behind on things or we eat like garbage for the week! The avocado salmon looks delicious. I've been vegetarian for four years, but have recently started eating fish and poultry on occasion. That one looks like a keeper!

  17. That looks so good if I hate 50% of the foods the recipes are made of haha! I need to work on my picky eating. Salmon? meh. Avacado? bleh. I'm so bad! It would be a good change from what we usually do-a meat and a carb!

  22. I hate cooking during the week - I leave my house at 7 a.m. and don't get home until 6. I like to do food prep on the weekends to make it seamless! I typically meal plan two weeks out and that way we always have something good on our plates without a lot of post-work stress!

  25. Your meals are so varied! How fun! I need to step up my meal planning game..they are typically lame and easy just because--three kiddos under four kind of limits my time in the kitchen. But these have inspired me to branch out! Have you ever prepped freezer meals? Also a time and money saver!

  28. I would love to meal plan more.. It's so hard to come home at 6pm and wonder what to eat, usually why we eat out and or eat badly at home.. One day I will try harder to meal plan haha.. Maybe once I'm a teacher and have an earlier end time!

  32. I just started meal planning last week! We're on week 2 now and I'm loving it so far! It definitely helps so you don't feel so stressed, plus its helped up not eat takeout as much!

  34. I love meal planning / prepping and knowing what's coming down the hatch in days to come! Thankfully I just have my appetite to appease right now, don't know how much that changes as I learn someday to cook for a s/o or kiddos!
