Ramen Veggie Soup



Today I've got an oldie, but goodie - this recipe comes from my archives!  Way back in 2014 when about 10 of you were reading, haha.  Considering that we still eat this about twice a month at our house, I figured it was beyond time to share it again.  It's a delicious, easy one pot meal that is perfect for a busy week night.  Plus, if you're sriricha fans like we are, you're going to really love this!

Ingredients
1 tbsp olive oil
1/2 onion, diced
2 large carrots, diced
2 large celery stalks, diced
14.5 oz can diced tomatoes, drained
32 oz chicken broth
1 cup water
1 lime, juiced
3 packages of Ramen noodles (any flavor is fine because we won't be using the seasoning packets)
Salt and pepper
Green onion to taste
Sriracha to taste

Directions
Chop up onion, carrots and celery.

In a large pot, heat your tbsp of olive oil over medium heat.  Add in chopped veggies and salt and pepper to taste.  Saute for 5 minutes or until soft.

After, add in your tomatoes, water, chicken broth and juiced lime to the pot.  Increase heat to high and bring to a boil (takes about 5 minutes).

Once boiling, stir in the Ramen NOODLES ONLY (throw out those seasoning packets) and reduce heat slightly.  Simmer for 5-7 minutes or until noodles are soft.

Serve immediately, topping with green onion and sriracha to taste.

We also like to serve warmed bread on the side - so good.  Enjoy!
