Cinco de Mayo Loves + Dinner

Hola!  Happy Cinco de Mayo!  

So a little confession: I've actually never been a big fan of Mexican food.  UNTIL, I got pregnant and now I'm alllll about it.  Tacos, nachos, quesadillas, guac (especially guac)... you name it.  We have this little place by our house that we've been frequenting the last few months and I can't wait to see if this new-found love for Mexican will stick around after baby is here.  Either way, I'm pretty sure these cravings have been the best thing that ever happened to Nick ;) 

Today I've got a few fun Cinco de Mayo inspired finds to put you in the festive spirit and am sharing my favorite homemade Mexican recipe, oven baked chicken tacos.  Yum!

If you're in need of a quick, easy dinner tonight - look no further.  These baked chicken tacos are one of our favorite recipes ever and we have them almost once a week.  Serve with a side of guacamole, Mexican or cilantro lime rice and you can't forget a classic margarita.  This is my go-to marg recipe because it's made with only real ingredients and none of that sugary, syrupy stuff.  Have one in my honor because they're just not the same without the tequila!  #onemoremonth

  4. Wow, not a fan until you were pregnant? My mom jokes that she had a baby so she would have someone to go get tacos and Mexican food with (since my dad wasn't a big fan) haha, so I've been a Mexican fiend forever. Glad you're enjoying it now! Maybe it will stick after you're pregnant! We made my baked queso tacos last night and I'm super excited to have them for leftovers today!!

  5. So funny how you started craving Mexican now that you're pregnant! Isn't it crazy what we end up wanting to eat? For years I age very little meat, then I became pregnant with JR and all I wanted was steak! Love that tote bag!

  6. I'm so jealous that you eat Mexican food all the time, it makes me so sick right now which in turn makes me very sad! Nathan and I joke that we are leaving the hospital and driving straight to our fave Mexican place!! That may be for a marg, too ;) Cute picks as usual! That cactus phone case is adorable!!

  12. I still make that baked chicken taco recipe, it's one of our favs and so easy to throw together! How cute are those towels and Philosophy makes the best body washes/bubble baths <3

  13. I love love love mexican and that baked chicken taco recipe is a staple in our house too. I've tried it with hamburger as well and it is just as yummy! Don't get to celebrate cinco today, I have to work back to back :(

  14. I used to be a 100% Italian kinda gal but I've made the switch to Mexican being my ultimate favorite. I may have to make Lentil tacos tonight to celebrate.

  16. SO funny! We are having the opposite problem. Mexican used to be my favorite thing EVER until I got pregnant. Now I've really stayed away from it for the most part and I'm hoping THAT changes once this little babe is here haha!

  17. Those baked tacos look delicious!! That's so funny you're all about the Mexican food now that you're pregnant! We actually failed on Cinco De Mayo because we had tacos all week and I'm pretty sure I'm going to pick up sushi tonight for dinner lol

  18. Oh girl, my mom & I have always been teased about our obsession with Mexican food haha. We could eat it daily! We are having leftovers tonight that just so happen to be enchiladas. Might have to stop and get some alcohol to make it a full on Mexican patio feast ;)

  20. I'm with you (pre baby) I am NOT a fan of restaurant Mexican food (well, minus chips/salsa and margs!) Sign me up for any foodtruck type tacos and burritos.. those are the best! :) Those chicken tacos sound pretty delicious!

  25. I had the opposite problem. I had been craving my mom's enchiladas when I was pregnant with my first, had them, and ever since I haven't been able to eat them haha. Go figure! I still love all other Mexican dishes though :)
